Structure and Physiochemical Properties of insulin
Insulin is a hormone composed of two polypeptide chains referred as A chain and B chain. Each chain is composed of a specific sequence of amino acids residues connected by peptide bonds. A and B chains are linked together by two disulfide bonds, and an additional disulfide is formed within the A chain. In most species, the A chain consists of 21 amino acids and the B chain of 30 amino acids. The physical property of insulin substance is white in colour and it is in the form of white crystalline powder because it is purified by crystallization, hence 'crystalline'. It is soluble in water and dilute solution of mineral acids and insoluble in alcohol Chloroform and ether.
